Here's everything we meal prepped this week for our daughters, both high school athletes, and breakfast is back on the menu. We made homemade granola for the first tier, loaded with toasted coconut, dried cranberries, pecans, vanilla cinnamon, and honestly, why have we never done this before? It was shockingly easy and unbelievably good. They ate the granola with Greek yogurt and better, then we made a fresh strawberry puree and folded it into a coconut chia seed pudding and topped it off with fresh blueberries. Both of these got very big smiles from the ladies. With our sons in college, the girls now run the menu. And where they were focused on meat and potatoes, the girls bring us a lot of variety and creativity. Like this Vietnamese lemongrass chicken vermicelli bowl. We chopped up fresh garlic, ginger, lemongrass, added in fish sauce, lime juice, and sugar. The marinade smells amazing even before it hits the grill and the chicken gets beautifully sticky and caramelized. Then we make a Nuwak Cham dressing with lime juice, fish sauce, sugar, garlic and red Thai chilies. This is what pulls the entire bowl together. It's sweet, salty, spicy, and tangy.
