Explains science for better eggs from @cooksillustrated
The creator explains the scientific reason hard-boiled eggs are difficult to peel, debunking the cold-water start method. He then demonstrates the superior technique of steaming cold eggs, explaining that the rapid, intense heat from steam prevents the egg white from bonding to the shell's membrane, resulting in a perfectly smooth, easy-to-peel egg.

Here's how to never get hard boiled eggs that good like this again. When you can't peel a hard boiled egg without gashing it, the issue is usually that the membrane, this thin film between the shell and the egg white, has cemented itself to the white. It happens when you start the eggs in cold water. The temperature rises slowly, and that causes the egg white to denature slowly too, giving it plenty of time to bond with the membrane. If you heat the eggs rapidly, on the other hand, the whites will cohere faster and pull away from the membrane instead of becoming fused to it. So does this mean you should start hard boiled eggs in boiling water? Nope. It means you should steam them. Steam contains much more heat energy than boiling water does, So it transfers that heat much better. And you only need about an inch of water instead of a whole pot. Place six eggs in the steamer basket and store them in the fridge until the last minute. Using really cold eggs will prevent them from overcooking. Once the water is boy
