Turns out, strong tea and vinegar is the best substitute for red wine. When you make a pot roast, a ragu, or any other kind of red wine braise, the wine brings two major flavor notes to the pot, better, dry tannins, and brightness. Both of those are key for balancing the richness of the dish. But many suggestions across the internet for red wine substitutes, like beef broth or fruit juices, don't contain those key notes and also bring in other flavors that can muddy the dish's profile. That's how we ended up with this two part sub. Black tea contains tannins, just as red wine does. We steep one bag in four ounces of boiling water, making it super strong by keeping the bag in the water until it fully cools. Then we add just a teaspoon of distilled white vinegar to replicate the acidity of wine. When we yes this substitute in a short rib ragu and tasted it head to head with a version made with the real stuff, the two samples were startlingly similar, almost indistinguishable. So whether you're avoiding alcohol, don't have any red wine on hand, or don't wanna open a bottle just to use a small amount, remember this trick.
