This is Babylonstorren tier South Africa's Cape Winelands, a working farm that dates back to 1692. In 2007, Karen Reuss and Better purchased the property and brought in French garden architect, Patrice Taravella. He designed a five hectare garden called the Versailles Of Vegetable Gardens. And here's the key difference between Babylon Tier and most hotels. They started with the farm. Most properties build a traditional hotel worst. Add a spa, landscape the grounds, maybe plant a garden. Then they try to figure out how to make it profitable. Babylon Tier did the opposite. The estate sits in South Africa's Cape Winelands at the foot of the Simonsburg Mountain. And the garden isn't decoration, it's the entire operation. Over 300 varieties, all edible or medicinal. About 70% of the ingredients come directly from the property. Lettuce moves from field to plate in one day. The philosophy is pick, clean, serve. Also, guests don't just eat from the farm.
