We start out with a big batch of dough that's formed into balls the dough gets squished down and proved before it gets pressed flat and makes its way into the oven. To get the baked tortillas back down to to room temperature before they're packaged, they go through this cooling conveyor. They're sorted into stacks and then cut using a special machine.
