Transcript excerpt

Three simple mistakes you're making when it comes to scrambled eggs. Number one, you're not whisking long enough. Your arm should be tired. You want completely uniform, all beautiful yellow. That is going to result in the smoothest, creamiest scrambled eggs. Tip number two, your pan is too hot. Turn the heat down like two notches. When your eggs hit the pan, you shouldn't hear a sizzle. That works for searing meat or sauteing onions. But right now with eggs, the best results will be low and slow. We want basically good pan, cold butter, cold eggs, and then slowly bringing this up to temperature. And finally, that brings me to stirring. You're not stirring your eggs enough. Hold, please. Your spatula should be moving constantly. Whatever shape you want to do. You could do figure eights. You could do circles. You could do zigzags. You could pull in from the edges. But keep the spatula moving. To recap, number one, whisk those eggs longer than you think. Number two, lower heat than you think because you can always turn it up. And number three, stir, stir, stir for the creamiest, smoothest eggs, and then get them right out of the pan onto the plate so you can eat.
